Roast Score

Siltepec El Jaguar comes from the high altitude Sierra Madre in Chiapas, Mexico, bordering the El Triunfo Biosphere Reserve, home to the endemic Quetzal. The region is particularly rich in biodiversity, with around 30% of Chiapas’ flora found here.

The area’s unique microclimate creates a cloud forest, influenced by the Soconuscu rainforest around the Novillero River. The humid climate, lots of shade, cool nights and rich soils combine to provide ideal conditions for growing speciality coffee.

Produced by a group of small producers, the beans are harvested and processed by hand. The coffee cherries are then de-pulped, fermented, washed, and finally dried naturally in the sun.
